The one thing I do differently is the baking time. As it get between 15-20 minutes of the second bake, I keep a close eye on them and take them out the minute I start to see any bubbling of the caramel on the edges. I have found that if I continue to bake past this point, the bars turn rock hard. Usually the shortbread part is still very pale at this point but will brown some upon standing. They remain so soft for several days this way. If I wait for the bubbling and the browning, it never fails that they end up rock hard after cooling.

It made more sense to put 2/3 of the dough pressed into the pan and 1/3 of the refrigeratored dough crumbled atop- otherwise the base is too scanty.
