Hi Shelly. I tried your recipe & it’s an absolute winner! My husband loves it. I want to make a big square or rectangular cake for my son’s birthday. Please assist with these 2 questions:
1. Can I use a glass pyrex dish or my oven roasting pan?
2. I have 30cmx40cm oven pan. How much batter do I need? X2 or X3.

I tried this recipe for a Christmas dinner cake. Firstly I don’t recommend using gel food coloring. I couldn’t get it to turn a nice red, stayed more of a muddy red. For the icing, I think my butter was still a bit too cold so my frosting turned out separated and curdled. I found a fix for that online that kinda worked. But in the end the cake tasted more like birthday cake (I didn’t add anything except some water and powdered sugar) than my aunts famous red velvet cake with cooked icing. I’m an experienced cook and baker, but I still have flops! I’m not blaming the recipe, I probably was the problem. But just thought I’d let y’all know for whatever it’s worth.
So I don’t think I’ll be trying this one again. My idea of red velvet cake apparently is different than this recipe’s. Thank you!

I baked a small 6inch but it was deep. Took and hour to bake. Can I over bake cake? Wish me luck once it cools I will slice it to make it layers. Ugh I wish i would have followed complete direction because the recipe was super easy to follow.
