I’m very disappointed. I’ve made countless brownies, including bombshell, and they came out great, but these…not so much. I followed the recipe exactly as written and they came out burnt. I mean they smelled. I took them out 10 minutes before time because I like gooey brownies. You can’t even taste the Oreos. Sorry Shelly, but these didn’t work for me. Upsets me when baking doesn’t turn out like I wanted.

One possible reason that some people are getting dry brownies is the choice of cocoa. This isn’t frequently talked about, but the amounts of fat and starch in differing brands of cocoa vary widely, and a higher-starch cocoa can result in dry, crumbly baked goods. You really want to be sure you’re using a high-fat cocoa (Dutch cocoas are usually higher-fat than natural cocoas, but not always). Here are a couple of references:

Pretty sure these are the best brownies I’ve ever made. They were SO GOOD. So thick, so fudgy, just perfect. I mixed the Oreos into the batter to make it easier and baked for 37 minutes. Definitely rich but that didn’t stop us— we inhaled them. Will be making again!

Really really nice recipe! The white chocolate and oreos were the perfect combo. I made only half a batch, and decreased the amount of sugar. They had a really nice crackly top. Thank you for the recipe.

Okay – these are the MOST INCREDIBLE brownies I have ever made!!!!! Twice. (I was a little put-off by comments saying they were “dry” – almost didn’t make the Oreo Brownies. There has to have been something off about how those reviewers prepared the recipe.) These are the richest, thickest, most chocolates, fudgy-in-the-middle brownies ever. SO GOOD! I called them “Mystery Brownies” and let tasters try to guess what the secret ingredient was – which everyone loved, as it gave them the chance to eat more brownies to solve the mystery.
