Easy Instant Pot Side Dish Recipe
It’s been a while since I posted an Instant Pot recipe. I haven’t stopped using my Instant Pot, but I slowed on posting recipes…mostly because my book release threw off my life a little bit this past month. AND I didn’t want to bore you guys with too many of the same.
BUT I guess some of you have been missing the Instant Pot recipes because I’ve gotten loads of emails and messages asking for more! So here we are today with a quick and easy one I think you will really like. Plus, if you don’t have a pressure cooker, it’s not a problem. This is just as easily made on the stove top.
Your kids will love this easy side dish. You could even mix in some cooked mushrooms, sauteed onions, or even chicken and make it a full meal!
And of course I used my favorite Challenge Butter in this one…it’s the best friends!
I make this one a lot, even increasing the recipe to make big batches at the beginning of the week to have it made. That’s what when I photographed this one. I made a larger portion to feed a crowd…
How to Make Instant Pot Butter Rice
Literally all you do is dump everything in your pressure cooker and turn it on. SO simple.
But note that depending on the type of rice you use the cook time can vary. I used THIS SIMPLE CHART from the Instant Post website to determine my cook time, because I generally use brown rice.
When the cook time is up, let the pot naturally release the pressure and then give it a stir!
It’s all ready to go! If you make this on your stove top just use the rice cooking directions on the package of the rice!
It comes out creamy and flavorful. Love a simple side dish!

Description

Ingredients
- 1 1/4 cups beef stock
- 1 1/4 cups French Onion soup
- 1 stick (1/2 cup) butter
- 2 cups brown rice
Instructions
- Place all ingredients in your Instant Pot.
- Use the manual setting, on high pressure for 22 minutes.
- Allow the pressure to naturally release.
- Serve warm.
Notes
Note that cook times can vary based on the type of rice you use and elevation. I used this chart on the Instant Pot site.

Quick note to say that you should rinse the starch off the rice before cooking them or in my experience they become a bit more sticky than if you don’t. I always use 1:1.25 rice to water ratio in the pressure cooker, but I’m sure people like rice in different ways.
I can’t wait to try this with barley. So creamy looking! I have to admit I was very surprised when I saw “pot butter” in the title. My guess was Shelly had moved to Colorado.
