Chicken in a Skillet Is An Easy Weeknight Dinner Packed With Flavor!
Making Chicken In A Skillet is incredibly easy and straightforward, PLUS it’s completely open to adaptation! Once you get the base recipe down, you can easily play around with flavors and add-ins.
This chicken recipe is done quickly and will easily become one of your favorites for busy weeknights.
What Kind Of Skillet Do You Need?
Of course you need a large skillet to start. You can use a cast iron skillet if that’s what you prefer, or just a stainless skillet will work! I recommend your skillet for this recipe be 10- inches in diameter. I used my All Clad skillet in the images because it’s large and deep!
Ingredients You Will Need:
This recipe is very, very simple. Here’s what you will need, and chances are you have most, if not all, of these things in your kitchen now.
- Boneless chicken breasts, and yes you could also use bonless thighs if you prefer!
- Bread crumbs. I use Italian breadcrumbs because it’s a quick way yo add flavor, but you can use unseasoned or panko if that’s what you have!
- Chicken broth
- Tomato paste
- Dried seasonings: oregano, thyme, crushed red pepper flakes, salt and pepper
- Garlic
- Olive oil. I recommend light olive oil as opposed to extra virgin in this recipe, since you’re just using it to fry.
- Mushrooms…and yes you can omit those if mushrooms aren’t your thing!
- Fresh parsley isn’t a requirement, but it is a nice garnish and looks pretty!
- Heavy cream is also not required, but can give this dish a slightly creamy and silky texture. You could also use cream cheese!
Tips When Making Chicken in a Skillet
- Be sure to season your chicken breasts well with salt and pepper!
- When you brown the chicken first you need to do this at a higher heat. The chicken will get brown and flavorful, but won’t be cooked all the way through. This is ok, as the chicken will cook in the sauce
- The sauce is simple just chicken broth, tomato paste and seasonings. You can adapt the seasonings as you would like!
- Adding the mushrooms is a delicious option if you like them. If you don’t you can leave them out…or even sun in another type of veggie.
- Adding a splash of cream at the end is a nice way to make your sauce rich and hearty, but it’s not necessary!
Do You Have To Bread the Chicken?
If you are watching your carbs and would prefer not to bread the chicken, no problem! You can absolutely make this with naked chicken. It works perfectly and will brown up just as nicely!
What Do You Serve With This Chicken?
I like to serve it with rice or pasta, but it would be great with potatoes too!
Add a side salad or a green veggie and you have an easy balanced dinner!

Chicken in a Skillet is a simple, one-pot chicken recipe that’s packed with so much flavor! This quick and easy recipe is perfect for busy weeknights.
Ingredients
- 2 1/2 – 3 pounds boneless chicken breasts
- salt and pepper to taste
- 1 cup Italian bread crumbs
- 1 1/2 cups chicken broth
- 1/3 cups tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 – 1 teaspoon crushed red pepper flakes
- 1 clove garlic, minced
- 1/4 cup olive oil
- 1 pound fresh mushrooms, sliced
- 1/4 cup fresh chopped Italian parsley
- *optional splash of heavy cream (2 tablespoons)
Instructions
- Season both sides of the chicken breasts with salt and pepper. Place the bread crumbs on a plate or in a shallow dish. Coat each chicken breast in breadcrumbs and set aside.
- In a medium bowl, whisk together the chicken broth, tomato paste, oregano, thyme, red pepper, and garlic. Set aside.
- Heat the oil in a large (10- inch) skillet over medium-high heat. Working in batches, brown the chicken on each side, 2-3 minutes. Return all the chicken back to the skillet, lower the temperature to medium-low. Add the mushrooms and the chicken broth mixture. Cover the pot and cook for 20 minutes. Remove the lid and cook for an additional 5-10 minutes to reduce and thicken the sauce.
- Add splash of heavy cream if desired, and stir to combine. Garnish with parsley.
- Serve over rice, pasta, or mashed potatoes.
